Sugar Free Gluten Free Chocolate Zucchini Muffins

The cocoa powder lends an intense dark chocolatey taste and the zucchini adds moistness in these sugar free gluten free chocolate zucchini muffins.

I really like the texture and flavour of these muffins. They satisfy a chocolate craving while still being relatively healthful.

Prep Time: 20 minutes
Cook time: 25 minutes
Yield: 12 muffins

Ingredients:

Sugar Free Gluten Free Chocolate Zucchini Muffins 1 cup brown rice flour
1/2 cup quinoa flour
1/2 cup tapioca flour (also called tapioca starch)
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cocoa powder (unsweetened)
2/3 cup plain, unsweetened yogurt
1 cup unsweetened applesauce
1 egg
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 cup packed, shredded zucchini

Directions:

Preheat the oven to 375 F. Grease a muffin pan or line with paper liners.

In a large bowl, whisk together the brown rice flour, quinoa flour, tapioca flour, baking powder, baking soda and salt.

In medium bowl, whisk the cocoa powder to break up any lumps. Add the yogurt and whisk until blended. Add the applesauce, egg, oil and vanilla, continuing to whisk until all ingredients are blended. Stir in the zucchini.

Add the wet ingredients to the flour mixture and stir just until moistened.

Pour the batter into the muffin cups and bake for 25 minutes or until a toothpick inserted into the centre of a muffin comes out clean.

Let cool for about 5 minutes in the pan then transfer to wire rack.
