Sugar Free Gluten Free Peanut Butter Banana Muffins

These sugar free gluten free peanut butter banana muffins are moist and delicious.

While gluten free recipes can tend to produce a dry product, the banana in these muffins keep them moist. You can add walnuts or pecans if you want a bit of crunch.

Prep Time: 15 minutes
Cook time: 20 minutes
Yield: 12 muffins

Ingredients:

Sugar Free Gluten Free Peanut Butter Banana Muffins 1 cup brown rice flour
1/4 cup quinoa flour
1/4 cup tapioca flour (also called tapioca starch)
1 teaspoon baking soda
1/2 teaspoon salt
3 ripe bananas
1/2 cup unsweetened applesauce
1/2 cup natural (unsweetened) peanut butter
2 eggs
1/3 cup vegetable oil
1 teaspoon vanilla extract

Directions:

Preheat the oven to 400 F. Grease a 12 cup muffin tin or line with paper liners.

In a small bowl, whisk together the brown rice flour, quinoa flour, tapioca flour, baking soda and salt.

In a large bowl, mash the bananas. Add the applesauce, peanut butter, eggs, oil and vanilla and whisk until blended.

Add the flour mixture to the wet ingredients and stir until blended.

Spoon the batter into the muffin cups and bake for about 20 minutes or until a toothpick inserted into the centre of a muffin comes out clean.

Transfer muffins to wire rack to cool.
